Looking for some tips. I have a nikon d70s, sb600, and a stofen omnibounce. I will be going to a race in about 2 weeks and actually have a paddock pass this time around. My previous attempts at people and flash photography during the last race was so-so (only used the onboard flash) at best and I would like to do better this time around. So....
1. Do I need to use the stofen?
2. What camera settings should I use in order to get a quick decent photo of the riders as I roam the paddocks (shutter priority, aperture priority, program, auto)?
3. Any other tips you could suggest?
Thank you very much.

1st off, you didn't mention what lens you are using.
how far will you be from the subjects
are you shooting relatively still or fast moving subjects
but generally:
Remove the Stofen, do not use bounce flash
Bump your ISO to 400 (Or the highest ISO wherin noise is tolerable to you)
Shoot in Shutter Priority Mode and use a 1/125 or 1/250 shutter or higher for action shots.

Thanks. I will probably be roaming the paddock taking photos of bikes and when opportunity presents itself, the riders and the, mmmm, girls :) . Most likely, I will have my 18-70 on until the race starts.

Oh ok, so you'll be relatively shoot still subjects. And I assume you will be relatively close to them, specially the girls, hehe.
Still the same settings from my last reply, just change the shutter to 1/60, to at least include some ambient light. Flash to TTL mode.... fire away!
Don't forget to share your photos here... specially the girls shots.
