I made the mistake of testing imovie in a wedding AVP without previewing it at full size on a screen. It turned out pixelated and I suppose the program compressed it so much, that it looked like the pictures were taken from a camera phone.
What programs do you guys use for wedding AVP's?

I use magix movie edit pro14.....works lika a charm

since you're using a mac, i recommend final cut pro

I've used iMovie for a wedding AVP. It's fast and easy. If you got a pixelated output, it's either you used low resolution photos or you didn't export your movie as a Large video.
Final Cut is great, but is quite complicated and takes some getting used to.

For wedding AVPs, I use Sony Vegas.
For wedding onsite photo slideshows: Imovie for Mac and Proshow Gold for PC.

Album Maker Gold for me.... All I have to do is arrange and drag the pics....
