DPPer HungTan has requested me to open this new thread. As I understand it, Hung operates a restaurant called Nasi Lemak ("Fragrant Rice" or "Aromatic Rice"). See his tread at http://digitalphotographer.com.ph/forum/showthread.php?p=391703#post391703

Allow me to echo here HungTan's EB idea (verbatim, in green font):

Since there may be quite a few members interested to come and learn how to cook, why don't we all have it as sessions of "DPP Food Tasting and Photographing". I am keen to share my little cooking that I know and someone from the group can discuss techniques of photographing food.

Just running across my mind is the following agenda: (Let me run this by some of you)

1) 2 hour duration
2) A glass or two of red wine will be served, since its going to be some cooking, talking and eating and photographing.
3) Cooking lesson 1 will contain the following agenda (may change due to non availability of ingredients)

a) Party dip lesson/preparation
b) Bhaji, an indian snack lesson/preparation (not spicy)
c) Malaysian Chicken Curry lesson/preparation - the must and mustn't do's --- secrets
d) Get the other chefs to cook some fried rice
e) Eat some Honey Glazed Spare Ribs - guarantee to be the most tender ribs you have ever tasted
f) Eat some Malaysian stir fried Kang Kong Blachan, more food more food etc etc
g) Eat some more food, drink the wine.
h) Eat some dessert, kape!
i) Make some dessert --- Onde Onde??? (Possible)
j) More food can be served if you are still hungry,

This is not a money making session, plenty of food to eat till you drop, I am aiming to cover costs only, so is P388 per head affordable?

Could you plse start a new thread call it "A session of cooking, eating and fun photography at Nasi Lemak, QC", in the meantime I will work out the possible dates, likely Tuesday, Wednesday or Thursday, say from 7 - 9pm ok????

I'm a regular at Nasi Lemak, and believe me, the food is greeaaat!!! Me and H.K. Tan always talk about cameras when I go there (though he always argues his Sony p&s is better than any DSLR...).

Just to be clear, I started this thread on behalf of HungTan. Please treat it as such, since it was he who made the offer to host this EB.

I am overwhelmed and thank you all by such a response. This is not really a cooking lesson where you pay to learn, and I like to propose that all of us be together in a group, happy chatting and peeling onions, chopping, cooking, and learning from one another. So basically you pay for the food, and of cos a glass of wine or two.

The address of Nasi Lemak is 165 Tomas Morato corner A Roces Avenue, QC. The landline is: 376 6108. Nasi Lemak is opposite the McDonalds, nx door to Office Warehouse of Tomas Morato.

I think the class size should not be more than 10 pax so that we can share things quickly and be more effective in the learning and transfer of kitchen skills. Oh, if you are not used to cooking, its also fine to join in, as I will give you easy lessons for now, and will be glad to show you exactly how to do things. All you need is a pair of keen hands.

Lets look at lesson 1 and what we can all accomplish:

1) Party Dip - Its Turkish/Greek/Arabic origin .... Babaganush or Mutabah as some may like to call it.

2) Party Appetizer, finger food - Indian Onion Bhaji. (I have just been making it this afternoon)

3) Malaysian Chicken Curry - Few good tips and your chicken will always taste very good. Will peel some onion, smash garlic, etc and cook a Malaysian Chicken curry together.

As for the dates: Since there are so many people, lets split into 3 groups of 10 pax max ok?

(A) Thursday 7-9pm 4/15/08
(B) Saturday 3-6pm 4/17/08
(C) Sunday 3-6pm 4/18/08

P380 per head to cover the food consumed. Cost of lesson - - Tech me photography if you like.

Guys,

I started off today training the staff here on preparing the dip and chicken curry.

It worked out good for the dip, even with the use of the local talong. I manage to find a good source (Santis at Timog Avenue) for the Tahinah or Tahini (sesame paste).

Our staff are now enjoying the chicken curry. We cooked it at 6pm today, and after the chicken has been soaked in the curry sauce, the chicken is really tender and moist.

Checked out the Indian onion Bhaji yesterday, and it worked out good too. Asard at United Nations Avenue has the flour for this dish.

Ha ha ha...... come and get it! :Scared:

We really had so much fun during our session with HK. We were not complete in attendance, though. Not only is HK a fabulous cook, but an excellent teacher as well. Great lessons, great food, great place, great photo opportunity!

Plse accept my humble apologies if I have not been a good host.

After meeting all of those present + a group of lawyers + a group of digital photographers, both splinter groups are now members of DPP too!

I have personally seen 2 photographs intended for exhibit, and Amen.... these are really some of the most beautiful photographs I have ever seen. That makes the little me really ever so humble....REQUEST: guys plse do some seminars of digital techniques and photography here at Nasi Lemak, and I will be glad to make Babaganush and Bhaji FREE for all of you.

I am very grateful for all who came, and I am even more grateful and happy that all of you are very interested in doing the exhibits, plus interest shown in the idea of doing some charity.

So far, from the surplus of tips etc, we managed to raise P1000. To this, I personally contribute same, therefore we now have P2000 in the treasury for the "charity mission".

I went to the hardware shop yesterday and both some specialized screws etc too. I hope to go to the hardware shop today and get the paint. So the work can be completed at its ernest.

Once this is complete, we can start to put up some photographs. I will announce it here.

May I suggest some members here start to form a "group" to assist the management of the "themes" & pictures for exhibiting, etc.

From here, may I also suggest we start a new BLOG. Dan, or Dr Alvin Agustin, would u mind doing so?

I have painted the back half of the wall with a strip of dark chocolate, sorry that's all I can get from the local shop when I ask them for a lighter shade of black.

As of tonight, I will put up the aluminium strip to hold the cleats for the photos. So 1 half is now ready b4 we close shop on 5/24/08 Saturday.

If I am not there as I sometimes need to go and buy things etc, plse look for Cora Lelina.

Babaganush

4 to 5 pcs Local Eggplant (Roast in oven at 180C 90 mins) until soft. After they cooled down, remove the skin and mesh it into a smooth paste

1 tsbn Tahini or Tahinah (Sesame Paste) available in Santis

1 clove Garlic (Finely chopped)

1 yellow lemon juice

Salt to taste

Onion Bhaji (5/5/08)

Filling
200g Large Onions, sliced coarsely
1 pinch Chilli Powder
1 pinch Tumeric Powder
½ tsp Salt
1 pinch White Pepper
¼ pinch Curry Powder
¼ tsp Coriander Powder
1 clove Garlic, finely chopped (add last)

Batter/Flour
150g Dhal Flour
½ tsp Salt
¼ tsp Tumeric
1 pinch Fennel (optional)
1 pinch Cummin Powder
¼ tsp Coriander Powder
¼ tsp Ginger Powder

Stir fry the onions in 2-3 tsbn cooking oil for 3 minutes on low heat. Add the spices except garlic.

Continue to stir fry until the onion caramelized, but not turning brown, then add the garlic for the last 2 minutes.

Let the onion cool off for at least 5 minutes.

Mix the batter ingredients with water till it becomes a thickish batter mix. Add the onion

Fry the onion bhaji in a small amount of oil (1/8 to 1/4 inch oil) until golden color. Keep the temperature medium so that it does not burn the bhaji.

Note: Each bhaji should be about the size of a dessert spoon, slightly flattened when frying.

Malaysian Chicken Curry

A – Grind into paste
20-30 pcs
Dried chilli (soaked in water for 30 mins)
100 gm
Young ginger (cut into small pieces)
20 cloves
Garlic (cut into small pieces)
30-40 pcs
Small onions (cut into small pieces)
3 pcs
Fresh chilli (cut into small pieces OR 50g)
3 pcs
Lemon Grass (cut into small pieces)
5 pcs
Candle nuts

B – Prepared as is
4 pcs
Curry leaf
3 pcs
Star aniseed
2 pc
Cinnamon
300 ml
Cooking oil

C - Meat

2 kg
Chicken, cut into pieces and skin removed if preferred, add 1 tsp salt to marinate for 30 minutes

D – Curry powder
3 tbs
Curry powder (Own recipe)

E – Coconut
1 lot
Coconut cream from 2 coconuts
600 ml
Coconut light cream

F – Potato
4 pcs
Medium size potatoes cut into pieces

Cooking Procedure

(0) Salt the chicken with 1 tp of iodised salt, leave for 30 mins.
(1) Use the food processor and turn ingredient into a fine paste.
(2) Add the curry powder to the paste, add water or cooking oil to make it into a paste with similar consistency.
(3) Heat the oil.
(4) Fry the cinnamon, star aniseed and curry leaves.
(5) Add curry paste and 1 tea spoon salt.
(6) Fry on reduced heat until the oil has separated from the paste.
(7) Add the chicken pieces and fry for 10-15 mins.
(8) Add light coconut cream.
(9) Simmer for 20 minutes.
(A) Add more water/light stock to the curry.
(B) Simmer for 20 more minutes.
(C) Add salt to taste.
(D) Add coconut cream.

If there are people interested in my recipes and cooking lessons, I will be very happy to organise more cooking and food sampling sessions.

The inner part of the wall is now ready for hanging photos. So far I have 1 volunteer who can help with organising and scheduling the exhibits, some photos are already on the wall for all to enjoy..... logistics, hanging, scheduling, theme setting etc.

As far as the "charity Fund" is concern, it stands at P2000

Ha ha ha, Santis is not a public listed company, I do not have any shares. Just a joke ok. As far as I know they dont normally stock Haloumi cheese as there were no demands in the past, so plse call them and ask them to order the cheese in from Makati branch. They are good in calling you once they get the stock in. Happy eating.
