Using a polarizer would've given more contrast to the sky during the shot as well as give you more defined clouds. I can understand the faster shutter speed since you were in a moving vehicle. Ideally though, a longer exposure would've helped since you could also use some detail in your foreground which is pretty dark, especially in the case of the second photo, which I think look promising in terms of composition but suffers from your foreground looking underexposed. A tripod and perhaps a longer shutterspeed would be my choice for a shot like this.

I think you can still save the second photo by doing some PP on it. Try using the Shadow/Highlight function in Photoshop and see if you can bring out some of the detail in the foreground.

And there's always the HDR route, as I'm sure someone here would suggest. Two photos, one exposed for the sky, one exposed for the foreground, clickety-click in Photoshop and voila.

try tonemapping it after HDR to see the details of those trees...and contrast for the sky...

Beautiful and awe-inciting cloud pictures, I like better the foreground in the photo "1" ... less black portions would probably draw your attention more on the clouds and just enough, would line up as matting to your wandering eyes. The "red, blue, yellow-gold" and the silhouette trees are my highlights for these photos. [ IMHO ]

if you are serious about shooting landscapes, i suggest getting off the van first and shooting with a tripod.

Also try to correct the purple and crimson fringes (color aberration) in the edges of the trees.

or try shooting long exposures using an ND4 or ND8 filters so U will properly exposed the foreground and background

aw, you should've gotten off the van. Though I've shot a lot of photos while riding vehicles, it is still best if you're still. :D
